Looking for the most indulgent food for the holidays?

Joshua Rea says he has the perfect gift for food lovers — in the form of truffles.

The owner of Gourmet Life in Darling Point stocks fresh truffles from around Europe; the fragrant foodstuff is refrigerated, packed on a plane on a Friday and arrives at his store the following Monday.

Spoken of in reverent tones by chefs and enthusiastic home cooks, the small fungus packs a flavoursome punch, and adds a unique flavour to dishes. It’s prize produce and a seasonal delicacy, harvested only in winter. “We have the very famous black truffle from Perigord in the south of France. That’s the species being farmed also in Australia when the season is on. But now is the French winter truffle season,” Rea says.

“When the season is on in Italy, I’ve got all the white truffles, then I swap to the French black truffle — I follow the seasons all around the world.”

While truffles are sold at market rates, but Rea (pictured below) says there’s good reason to pay for the real deal.

“It’s traded like a commodity; naturally the season depends on the weather. The price was low last year and it’s gone up a bit because of demand.

“White truffle can’t be cultivated so it’s got to be found in the wild by a pig or a dog. Most people are hunting for it at three in the morning, because no one wants to let anyone else see where the truffle is coming from — it’s a hell of a guarded secret. That’s why they call it the white diamond.”

The grocer also says it’s possible to buy truffles as a gift for a reasonable price, as a little goes a long way.

“We recommend about five to seven grams per person on the black truffle and seven to 10 grams per person on the white truffle,” Rea says. “They’re sold by the gram, so it’s about $35 for 10 grams of fresh black French truffle, and about $85 for 10 grams of the white truffle — have it over a nice bowl of pasta, an omelet, sunny side up eggs or risotto.”

The mushrooms are hand selected in the lush forests of this mountainous region, and flown direct from Paris over the weekend, to ensure the freshest possible produce for you.

Karat Caviar

Farmed near the Sea of Galilee in Israel, Karat Caviar is one of the world's most premium caviar producers.

Twenty three years ago, Karat sourced pure Russian Oscietra sturgeon (Acipenser gueldenstaedtii) from their natural habitat in the Caspian Sea. The waters in which they live are pristine, sourced from the melted snow flowing in to the Dan Springs, the main source of the River Jordan.

As the female fish mature, they produce approximately two kilograms of roe, and each tin is sourced from just one fish. They undertake no pasteurisation, meaning the roe maintains its natural texture, and it is lightly salted by master artisans in the Russian malossol method.

The result? The purest caviar - light and briny, clean on the palate, with a slightly nutty flavour, and a firm yet yielding texture that melts on the tongue.

Truffle Salami, Torn Buffalo Mozzerella and Basil Oil Pizza

Ingredients for the base

375ml (1½ cups) warm water
2 teaspoons (7g/1 sachet) dried yeas
Pinch of caster sugar
600g (4 cups) plain flour
1 teaspoon salt
60ml (¼ cup) Galateo olive oil, plus extra for brushing


1 tin of whole Italian tomatoes
1 tablespoon of tomato puree
1 garlic clove
100g Truffled Salami
150g Buffalo Mozzerella
Handful Basil leaves

Drizzle A L’Olivier basil olive oil

80g Freshly grated Parmigiano Reggiano


Step 1: Combine the water, yeast and sugar in a small bowl. Set aside for 5 minutes or until foamy. Combine the flour and salt in a large bowl and make a well in the centre. Add the yeast mixture and oil. Use a round-bladed knife in a cutting motion to mix until the mixture is combined. Use your hands to bring the dough together in the bowl.

Step 2: Brush a bowl lightly with oil. Turn the dough onto a lightly floured surface and knead for 10 minutes or until smooth and elastic. Place in the prepared bowl and turn to coat in oil. Cover with plastic wrap and set aside in a warm, draught-free place to rise for 30 minutes or until dough doubles in size.

Step 3: Stretch out the dough until it resembles a thin pizza shaped base. Brush the base lightly with oil and set aside for 10 minutes.

Step 4: Heat a small amount of oil a saucepan and add the minced garlic and fry for a couple of minutes. Add in the tinned tomatoes and stir, the puree and some of the torn basil leaves. Cook until thickened and delicious.

Step 5: Gently pour the tomato sauce across the base and spread thinly to the edges, leaving a slight crust. Evenly place the truffled salami across the base along with the torn mozzerella.

Step 6: Carefully transfer the pizza into the oven and cook for around 15 minutes or until golden brown.

Step 7: Remove from the oven and add the torn basil leaves, the grated Parmesan and drizzle the pizza with basil oil.

Wild Asparagus

The European spring time is asparagus time! Wild Asparagus is grown in the French countryside. You can find bundles of these delicate buds exposed outside on the sidewalk, on the edge of country roads, leaning against stone walls or hiding around ancient nuraghi!

The wild asparagus has a more pronounced, bitter flavor than its cultivated cousin. It is often used to prepare frittatas, soups, risottos or simply on its own! It would also work well with a strong flavored goat or sheep cheese.

The season for Wild Asparagus is very short, lasting only 6 weeks. As this is a very fresh and perishable product contact us quickly if you would like to try this premium produce!

Jamaican Me Crazy- Jerk Chicken

Spice up your mid- week dinners with our Gourmet Life Jamaican Jerk Chicken recipe, using the insanely juicy chicken thigh and a combination of some fantastic flavours from the Caribbean.

Serves 4-6 * Prep 20 minutes * Cooking 1hr 30 mins


1 tbsp Sea salt flakes
2 tsp black pepper
1½ tbsp ground Jamaican pepper
2 tsp ground cinnamon
½ tsp ground nutmeg
2 tsp brown sugar
80 ml (⅓ cup) Yuzu juice
2 garlic cloves, finely chopped
1 Trinidad Scorpion chilli or 2 Scotch Bonnets, seeded, chopped
1 cup Arroz Largo Rice
1 tin kidney beans
1 onion, chopped
6 spring onions, chopped, plus extra, to serve
2 tbsp thyme leaves
2 tbsp vegetable oil
3 tsp finely grated ginger
8 chicken thighs, skin on, boneless
Salt, to taste
Lime wedges, to serve


Jerk Chicken

Ideally, the chicken thighs should be left to marinate for 1-2 hours, or preferably over night before cooking. Also a handy tip would be to use gloves when you’re handling the chillies as they’re very hot!

Step 1: Using a food processor, blend the sea salt, black pepper, onions, thyme, oil, spices, ginger, sugar, Yuzu juice, chillies and garlic to make a paste.

Step 2: Coat the chicken thighs in the marinade and place in a bowl in the fridge for as long as you can.

Step 3: Remove chicken thighs from the marinade and BBQ for 20 minutes or until cooked through. Turn occasionally to crisp up both sides.

Rice and beans

Step 4: Pour the beans into a large saucepan and cover with 1.5 litres of water. Season the water with black pepper, thyme and garlic then bring to the boil. Reduce to a medium heat, cover and simmer for 55 minutes or until the beans are tender.

Step 5: Add the rice, cocunut milk, chilli, spring onions and 2 tsp of salt and stir to combine. Bring to the boil, then reduce to a low heat, cover and cook for 20 minutes until the rice is tender and the liquid has absorbed. Remove the thyme, garlic, chilli and spring onions.

Serve the Gourmet Life Jerk Chicken on a wooden board with lime wedges and scatter over extra spring onions. Serve with the rice and beans and a natural yoghurt with coriander to cool the spiciness.

La Catedral de Navarra is Spain's premium producer of preserved vegetables.

Located in the Ebro Valley in the north of Spain, every stage of production, from the soil to the jar, is controlled by the Sainz family, ensuring that the vegetables you eat are of the highest integrity and flavour.

They are particularly famous for their sweet Piquillo Peppers, tender Baby Broadbeans, and most importantly, White Asparagus, which is handpicked at night from their fields to keep them a beautiful ivory colour.
